Today's Eats

Today was a good day. We got up and visited my grandparents because the boys had been begging me to take them over there. I think it's awesome that Iain and Ryan have access to their great-grandparents. I don't have any statistics on how common that is but I don't feel like it's very typical. My grandfather is 88 and my grandmother is 85 and they are both still pretty sharp. I hope if I live that long that I'm in the shape they're in. Anyway, I didn't eat breakfast before we left so when we got home I had brunch, which was the rest of my sandwich from last night and some grapes.

A little later I was still hungry so I snacked on some Stonyfield French Vanilla yogurt with a little of my homemade granola thrown in. When I cooked the granola yesterday it went a bit longer in the oven than it should have so it had a hint of a burnt taste but it was still pretty good. Also, I used molasses to sweeten it combined with melted butter and I think, the next time I make it, I will use coconut oil and honey and see what the difference is with that. No picture of the snack. I was too hungry to wait!


For dinner I had some chicken that I cooked last night along with a spring mix salad.

Funny story about the chicken which will do nothing to eradicate my reputation in my family as a bad cook...It was a whole chicken, organic, and gorgeous really. I prepared it by buttering the skin, liberally seasoning it with Lemon Pepper, and putting it in a 350 degree oven. It was a little over 3 lbs so I figured it would take about and hour and a half to cook but planned to pull it out of the oven part of the way through the process to see how it was doing. Well, with 25 mins left on the timer, I took it out of the oven and using my handy-dandy digital thermometer checked the temp in the meaty part of the thigh - 61 degrees?! WTF? That seemed crazy but, it's a digital thermometer so I put it back in the over for another 30 mins. When I pulled it back out the temp was only around 90 degrees. What the heck was going on? I was planning to take it out around 165 degrees but at this rate it was going to be cooking all night. Well, I put it back in the oven for 15 more mins and when I pulled it back out of the oven, it looked done so I knew the temp would be right where I wanted it. Put in the thermometer and....91 degrees! This was ridiculous, I could see with my own eyes that it was doner than done. There MUST be something wrong with my trusty thermometer. Closely I inspected the device, looking for a crack in the case or some other sign that would give me a clue to what the malfunction was. I flipped it over and looked at the underside and saw something quite unexpected. There was a switch I had never seen before and on one side was an "f" and on the other side was a "c". Oh - my - god. It was set to "c" for CELSIUS. Jiminy Christmas, I didn't even know it had that function and just assumed the temps I was seeing were Fahrenheit. Needless to say, I felt like a dummy and had nearly cremated an $8 organic chicken.

Stick a fork in me - I'm done.
