
That really tied me over and kept me feeling satisfied until we ate lunch around 2pm. Recently I've been on a natural/organic meat buying binge because several things have gone on sale. Well I picked up a couple of beautiful ribeye steaks and needed to cook or freeze them today so, I decided to cook them! Gosh, I have to tell you, sometimes there is nothing like the taste of a really good steak and this was no exception. My only quibble is that I overcooked mine but it was still rather tasty. I prefer mine more rare. Served alongside were some orange tomatoes my neighbor was kind enough to share with us. I sliced them and then drizzled them with olive oil, balsamic vinaigrette, some basil, and a touch of salt and pepper. They were sweet and delicious. I love my neighbor! Also, I prepared a recipe that can be found on the Pioneer Woman's website for Corn Casserole.

Down here in the south we call it cream corn and it is one of the most delicious and decadent things you will ever put in your mouth. We ate a big lunch today because we're going to a party tonight and I didn't want to be too tempted to pig out while we're there. This was one of those stick to your ribs kind of lunches!
