Today's Eats - Good News!

Hey! I lost two pounds this week! Yaaayyyy! I had to get on the scale 3 times before I'd believe it. One thing I didn't do this morning was take my measurements so I'll do that tomorrow AM and post my new stats. 2 pounds is equal to two boxes of butter, I'll take that, thank you very much.

On to today's eats. This morning, my sister and I were going to Costco, (like Sam's Club) and on the way, we stopped at Chick-fil-a for a chicken biscuit. I don't have a photo of that because we were in the car but I'm sure you have a good enough imagination to conjure up a biscuit with a piece of chicken on it. The biscuit had 420 calories with 19 of those coming from fat. Not too bad. Not great either but, not too bad. We also split a medium sweet tea but she had more than me. The drink was 130 calories all together and I had probably the equivalent of 45.

For lunch the boys and I were finally able to meet Sean but not without suffering through some stress and drama prior to our arrival. The boys had gone to my mom's house while Beth and I were at Costco and I picked up my car from my house on the way back to my mom's so we could go directly to Sean's office. Well, once the boys were loaded up in the van, I opened my door to get in and saw ants running along the frame of the car. LOTS of ants. I freaked out and ran to the passenger door to open it and check - MORE ANTS! They must have a nest somewhere in the frame of the car. My mom was kind enough to loan me her car and tonight we have to go back and see what we can do to extricate the ants from the car. Anyway, once we arrived in Mebane 30 minutes later, we decided to go to an Italian restaurant called Pomodoro's. It's a cute little place with really good fresh food. They make their own bread, pasta sauces, etc. and it's quite delicious.

I started out with one slice of this:

Then I ordered a Chef Salad with the house Italian dressing on the side:

Oil dressings are a great choice to accompany salad because so many veggies cannot be digested properly without some fat to help break them down. I only ate a small portion of the salad as you can see here:

I ate most of the veggies, some cheese, a couple of olives and one of the ham and turkey roll-ups. To drink, instead of ordering a soda I requested unsweetened tea with lemon and it was really good! Today was a hot day and that tea really hit the spot.

I'm not sure what we're doing for dinner yet but I will update this post later tonight. Whatever we do it will involve me cooking!

Update: At 8PM I couldn't wait any longer for dinner. My husband was in the kitchen with the boys conducting some kind of scientific experiment so I couldn't actually cook anything. Thank goodness I had leftover rotisserie chicken in the fridge so eating wasn't going to be too much of a challenge. The other day at the grocery store I picked up a gorgeous rustic pumpernickel boule that had already been sliced so tonight I combined some leftover chicken with that bread along with a touch of mayo and my trusty Claussen's sandwich pickles and Voila! Dinner is served.

Oh yeah, don't forget to add a few Kettle Chips with salt and black pepper on them. Delish!
